Elements :
To make pastry
500g normal flour
140g white sugar
250g butter without salt, cubed
4 egg’s yolks
To make filling
5 eggs
140g superfine sugar
150ml thickened cream
⅔ lemon juice
Procedure 1
First, mix the flour and icing sugar in a bowl to make the pastry. Knead the butter into the flour with your fingers until it becomes crispy. Merge within the egg yolks. If the pastry (Tart) is still too dehydrated, mix ½ tablespoon water until it comes together. Roll into a ball and divide in half . Roll out the tart with your hands, enfold the pastry in cling film, then cold for at least half an hour. Meanwhile the pastry is chilling, make the filling. Beat all the ingredients, except for the zest, together. Screen the mixture, then whip in the zest.
Procedure 2
Roll out the pastry on a lightly floured surface to like a coin, then lift into a 23cm tart tin. Press down softly on the bottom and sides, then cut out any unnecessary pastry. Spear a few holes in the bottom with a knife and put back in the refrigerator for 30 mins.
Procedure 3
Heat fire to 160C/140C. Line the tart with foil and fill with rice or dried beans. Bake for 10 mins, then remove the tart tin from the oven, discard the foil, and bake for another 20 mins until biscuity. When the pastry is ready, remove it from the oven, cascade in the lemon mixture, and heat up again for 30-35 mins until just set. Leave to cool, then remove the tart from the tin and serve at ambient temperature.
